I really enjoyed visiting both the Alcazaba and Gibralfaro Castle, even if it's a bit of a trek to get up to the castle. The incredible views more than make up for that though. Inside both attractions there are some great things to see too, including fountains, cannons and artefacts.

Alcazaba is a Moorish fortress. Visit it together with the higher located ruins of the Gibralfaro Castle, and look at excellent views over the town and the bay.
